Chocolate Chip Walnut Cookies

Christmas is the season of giving and sharing. What better than to share your homemade gifts with family and friends? Chocolate chip walnut cookies are the perfect gift for the season, and your labour of love will surely be greatly appreciated by everyone. In under an hour, with only a few ingredients, this chocolate chip cookies recipe will ensure you have delicious and lovely goodies ready to deliver to your loved ones.

Go healthy by using QL Deli Fresh eggs for lower cholesterol content (up to 40% lower than normal eggs). Combine with a few other easily available ingredients such as plain flour, butter, baking powder, dark and white chocolate chips, brown sugar and white caster sugar, and flavour with a hint of vanilla essence.

Ingredients

150 gplain flour
1 tspbaking powder
pinch of salt
80 gbutter, diced and softened at room temperature
50 gsoft brown sugar
50 gcaster sugar
1QL Deli Fresh eggs
1 tspvanilla essence/extract
50 gdark chocolate chips
50 gwhite chocolate chips
60 gchopped walnuts

Method

  1. Preheat oven to 180 C. Line 2 baking sheets with parchment or baking paper or grease with butter.
  2. Sift plain flour, baking powder and salt together into a medium bowl, leave aside.
  3. Cream butter and sugars with an electric mixer until well combined.
  4. Beat in the egg and vanilla essence/extract, mix well.
  5. Use a wooden or rubber spatula to fold in the flour mixture.
  6. Stir in 2/3 of the dark and white chocolate chips, stir briefly, then followed by 2/3 of the chopped walnuts.
  7. Use two teaspoons to spoon the cookie dough onto the lined baking sheets. Flatten the cookies with the back of a teaspoon or fork. Space the cookies at least 1 inch apart as they will expand during baking.
  8. Sprinkle the remaining chocolate chips and nuts on top of the cookies before baking.
  9. Bake the cookies for 20 – 25 minutes or until the cookies are golden brown. Transfer the cookies to a cooling rack to cool completely before storing in an airtight container or pack in a gift jar/box.

QL Kitchen Tips:

  • You can replace walnuts with other types of nuts such as almond, pecan or hazelnuts.
  • Caster sugar can be replaced with soft brown sugar if desired.
