This light and fluffy Soufflé Omelette has a delicious savoury filling of beef jerky, cheese and sun dried tomatoes. Oh yes, and it’s quick and easy to prepare for a protein-packed breakfast or lunch.
We have used QL Deli Fresh eggs, which are full of nutrition and contain up to 40% less cholesterol than ordinary eggs. Pick up a pack at your local supermarket.

Ingredients

15 g | sun dried tomato |
30 g | beef jerky |
20 g | parmesan cheese |
1 tbsp | oil |
A pinch of salt | |
A pinch of pepper | |
A handful of mixed salad (as a side) |
Method
- Separate the QL Deli Fresh eggs yolks from the whites
- Roughly chop sundried tomato and beef jerky.
- In a mixing bowl, whisk egg whites until light and fluffy, seasoning with salt and pepper.
- Combine both egg yolks and whites. Stir in half of the parmesan cheese, sundried tomatoes and beef jerky.
- Heat a drizzle of oil in a small frying pan and pour in the egg mix. Let it cook for 2minutes, until puffed up, then scatter the balance of parmesan cheese, sundried tomato and beef jerky.
- Fold the omelette into half and let it continue to cook for another 3 minutes.
- The outer layer should be golden brown whilst the inside should be light and creamy.
- Serve the soufflé omelette straight from the pan with some salad.
