Almond London

QL Kitchen’s Delicious London Almond recipe sees whole roasted almonds encased in dough and coated with a rich chocolate exterior. A sprinkling of roasted almond nibs adds more crunchiness to this cookie which has fast become a holiday classic.

Preparation time: 30 minutes
Cooking time: 20 minutes
Makes: 100 cookies

Ingredients

100 piecesalmond (whole)
1 kgchocolate covertures
70 galmond nibs
For the biscuit crust:
125 gbutter
35 gicing sugar
1/2QL Omega egg
190 gflour
35 gground almond

Method

  1. Toast whole almonds in an oven for 10 minutes at 160C
  2. Next, cream butter with icing sugar. One it’s creamy, add in QL Omega egg.
  3. Fold in flour and ground almond.
  4. Take 8 g of dough and wrap it around 1 almond. Continue this process with the rest of the dough and almonds.
  5. Bake in oven at 160⁰C for 18 minutes. Once its cooked, let them cool.
  6. Melt chocolate covertures in microwave for 1-2 minutes then coat the almond cookie and transfer into paper cups.
  7. Spoon more chocolate onto cookie and sprinkle some toasted almond nibs onto it.
  8. Set in fridge or in an air conditioned room.
