Japanese Cotton Cheesecake

Ingredients A:
40 gcastor sugar
50 gunsalted butter
250 gcream cheese
100 mlfresh milk
1 tbsplemon juice
Ingredients B:
6QL Omega egg white
100 gsugar
¼ tspcream of tartar
Ingredients C:
60 gflour
20 gcorn flour
¼ tspsalt
6QL Omega egg yolk
Green tea powder


  1. Preheat the oven to 160°C.
  2. Combine all ingredients A into a double-boiler, continue to stir mixture with a wire whisk, and bring to boil.
  3. Combine all ingredients B in a mixture bowl. Whip at high speed until stiff peaks form.
  4. Combine ingredients C, mix into ingredients A, fold the batter into ingredients B.
  5. Spoon mixture into cake tin.
  6. Steam bake for 20-30 minutes at 160°C.
  7. Garnish with green tea powder and strawberries
