Double Chocolate Brownies

These brownies are rich and decadent with the double chocolatey-ness of a cocoa batter and chocolate chunks. They are lovely on their own but even more luxurious served with vanilla ice cream and chocolate sauce.

Add 1 and half QL Omega eggs to the mixture to bind it together, and for that little health kick from the protein and 10 essential vitamins and minerals, including Omega-3 and DHA for heart health.

Ingredients

75 gunsalted butter, melted
65 gwhite sugar
55 gbrown sugar
¼ tspvanilla essence
medium egg
45 gplain flour
20 gcocoa powder
⅛ tspbaking soda
¼ cupsemi-sweet, roughly chopped chocolate
A pinch of salt
A handful of walnuts, chopped (optional)
For serving:
Vanilla ice cream
Chocolate sauce

Method

  1. Preheat oven to 170C. Line a baking tin with parchment paper.
  2. In a mixer, blend melted butter with white and brown sugars.
  3. Add in vanilla essence and eggs. Blend well on slow speed.
  4. In a separate bowl, sift together flour, cocoa, baking soda and salt.
  5. Fold dry ingredients into the wet ingredients and mix well. Ensure all ingredients are evenly combined. Fold in chopped chocolate and walnut.
  6. Pour batter into prepared tin. Bake for30-35 minutes or until done.
  7. Serve warm with a scoop of vanilla ice cream and chocolate sauce.
