These brownies are rich and decadent with the double chocolatey-ness of a cocoa batter and chocolate chunks. They are lovely on their own but even more luxurious served with vanilla ice cream and chocolate sauce.

55 g | brown sugar | |
¼ tsp | vanilla essence | |
1½ | medium egg | |
45 g | plain flour | |
20 g | cocoa powder | |
⅛ tsp | baking soda | |
¼ cup | semi-sweet, roughly chopped chocolate | |
A pinch of salt | ||
A handful of walnuts, chopped (optional) | ||

Method
- Preheat oven to 170C. Line a baking tin with parchment paper.
- In a mixer, blend melted butter with white and brown sugars.
- Add in vanilla essence and eggs. Blend well on slow speed.
- In a separate bowl, sift together flour, cocoa, baking soda and salt.
- Fold dry ingredients into the wet ingredients and mix well. Ensure all ingredients are evenly combined. Fold in chopped chocolate and walnut.
- Pour batter into prepared tin. Bake for30-35 minutes or until done.
- Serve warm with a scoop of vanilla ice cream and chocolate sauce.
