Rich, creamy, smooth and fragrant with vanilla, this melt-in-the-mouth custard that is off-set with an exquisite crunch of caramelised sugar is undeniably one of the most popular desserts of all time. And to top it off, Crème Brulee is surprisingly simple to make!

Method
- Preheat oven to 160C.
- In a mixing bowl, pour in QL Deli Fresh egg yolks, cream, sugar and vanilla essence. Using a hand whisk, lightly combine the mixture and pour it through a sieve to strain out any sediment.
- Pour the mixture into ramekins and place them on a moderately high baking tray. Place the tray in the oven and carefully fill it with hot water to about 1.5 cm high. Bake for 20 minutes until the sides of the custard has set but the middle is still a little wobbly.
- Remove the ramekins from the tray and leave to cool, then transfer them to the fridge to chill for at least 2 hours.
- To serve, sprinkle a thin layer of castor sugar onto the custard and burn it with a kitchen torch or blowtorch until caramelised. Let the sugar set (harden) for 3 to 5 minutes.
- Decorate with whipped cream (optional) and some fresh fruits or berries.
QL Kitchen Tip
When preparing the caramelized sugar crust, please be careful not to torch the sugar for too long as it browns and gets burnt easily. Move the blow torch constantly to prevent burning a particular spot.
