Black Forest cake is a classic favourite with a few simple elements: chocolate cake, whipped cream, cherries and chocolate. Although the traditional German black forest cake recipe (forest torte) contains Kirsch, a cherry liquor, it is common nowadays to find black forest cakes without alcohol.

Ganache topping | ||
55 g | dark chocolate | |
50 g | whipping cream | |

1 can | dark pitted cherries, chilled | |
150 g | non-dairy whip topping | |
Fresh cherries / mixed berries / extra canned cherries (for decoration) |
Method
- To make the sponge, preheat oven to 180C. Line a 6-inch round tin with parchment paper.
- Using a mixer, whisk together the sponge mix, QL Omega eggs and water until pale and thick. This should take 5 to 10 minutes.
- Fold in the oil.
- Transfer the batter to the tin and bake for 30 minutes or until done.
- Cool the cake on a wire rack. Chill until ready to use.
- To make the ganache, melt the chocolate in a double boiler. Mix in the whipping cream.
- To assemble, drain the cherries thoroughly.
- Whip the cream.
- Slice the cake into 3 layers.
- Sandwich the cake layers with the whipped cream and cherries, ending with a layer of cake. Spread ganache over the top cake layer. Decorate with fresh cherries, mixed berries or extra canned cherries. Chill until ready to serve.
