Classic Black Forest Cake

Black Forest cake is a classic favourite with a few simple elements: chocolate cake, whipped cream, cherries and chocolate. Although the traditional German black forest cake recipe (forest torte) contains Kirsch, a cherry liquor, it is common nowadays to find black forest cakes without alcohol.

Ingredients

Chocolate sponge
115 gchocolate sponge mix
115 gQL Omega Eggs (about 2 full eggs)
25 gwater
30 gvegetable oil
Ganache topping
55 gdark chocolate
50 gwhipping cream
Other ingredients
1 candark pitted cherries, chilled
150 gnon-dairy whip topping
Fresh cherries / mixed berries / extra canned cherries (for decoration)

Method

  1. To make the sponge, preheat oven to 180C. Line a 6-inch round tin with parchment paper.
  2. Using a mixer, whisk together the sponge mix, QL Omega eggs and water until pale and thick. This should take 5 to 10 minutes.
  3. Fold in the oil.
  4. Transfer the batter to the tin and bake for 30 minutes or until done.
  5. Cool the cake on a wire rack. Chill until ready to use.
  6. To make the ganache, melt the chocolate in a double boiler. Mix in the whipping cream.
  7. To assemble, drain the cherries thoroughly.
  8. Whip the cream.
  9. Slice the cake into 3 layers.
  10. Sandwich the cake layers with the whipped cream and cherries, ending with a layer of cake. Spread ganache over the top cake layer. Decorate with fresh cherries, mixed berries or extra canned cherries. Chill until ready to serve.
