| 1 | medium onion, chopped | |
| 50 g | chicken breast, diced finely | |
| 40 g | carrot, diced finely | |
| 40 g | green capsicum, diced finely | |
| 10 g | butter | |
| 260 g | cooked Japanese rice | |
| 1 tbsp | soy sauce | |
| ½ tbsp | tomato ketchup | |
| 1 tbsp | demi-glace | |
| Black pepper | ||
| Garlic powder | ||
| Omelette: | ||
| 4 | QL Omega Eggs | |
| 1/16 tsp | salt (slightly heaped) | |
| ½ tbsp | oil | |
| Sauce: | ||
| 1 tbsp | soy sauce | |
| 1 tbsp | tomato ketchup | |
| 1 tbsp | demi-glace | |
| 1 tsp | sugar | |
| 2 tbsp | water | |
| Topping: | ||
| A handful of shredded nori (dried seaweed) | ||
Method
- To make the sauce, boil all the ingredients in a saucepan. Set aside and keep warm.
- To make the fried rice, heat cooking oil in a frying pan and sauté onion until fragrant.
- Add chicken, carrots and capsicum. Sauté until cooked.
- Next, add butter, then cooked rice, and fry until rice is hot and coated with oil. Add black pepper and fry for one minute.
- Add the soy sauce, tomato ketchup, demi-glace and garlic powder. Stir well to distribute sauces through the rice.
- Lightly press sufficient fried rice into an oval or round bowl and overturn the rice onto a plate.
- To make the omelette, whisk QL Omega Eggs and salt in a medium bowl using a pair of wooden chopsticks.
- Heat oil in a small non-stick frying pan and pour in QL Omega Eggs. Using chopsticks, whisk QL Omega Eggs in the pan until half-cooked. Once the base of the omelette is set, slide it onto the rice.
- Garnish with nori and serve.
