Omurice

Ingredients

Fried Rice:
1½ tbspcooking oil
1medium onion, chopped
50 gchicken breast, diced finely
40 gcarrot, diced finely
40 ggreen capsicum, diced finely
10 gbutter
260 gcooked Japanese rice
1 tbspsoy sauce
½ tbsptomato ketchup
1 tbspdemi-glace
Black pepper
Garlic powder
Omelette:
4QL Omega Eggs
1/16 tspsalt (slightly heaped)
½ tbspoil
Sauce:
1 tbspsoy sauce
1 tbsptomato ketchup
1 tbspdemi-glace
1 tspsugar
2 tbspwater
Topping:
A handful of shredded nori (dried seaweed)

Method

  1. To make the sauce, boil all the ingredients in a saucepan. Set aside and keep warm.
  2. To make the fried rice, heat cooking oil in a frying pan and sauté onion until fragrant.
  3. Add chicken, carrots and capsicum. Sauté until cooked.
  4. Next, add butter, then cooked rice, and fry until rice is hot and coated with oil. Add black pepper and fry for one minute.
  5. Add the soy sauce, tomato ketchup, demi-glace and garlic powder. Stir well to distribute sauces through the rice.
  6. Lightly press sufficient fried rice into an oval or round bowl and overturn the rice onto a plate.
  7. To make the omelette, whisk QL Omega Eggs and salt in a medium bowl using a pair of wooden chopsticks.
  8. Heat oil in a small non-stick frying pan and pour in QL Omega Eggs. Using chopsticks, whisk QL Omega Eggs in the pan until half-cooked. Once the base of the omelette is set, slide it onto the rice.
  9. Garnish with nori and serve.
