Pomegranate Jam Served with Figo Wholemeal Mantou

The fruit has high levels of flavonoids and polyphenols, which are strong antioxidants that offer protection against heart disease and cancer. A glass of pomegranate juice has more antioxidants than green tea, blueberries and cranberries.

Preparation time: 15 minutes
Cooking time: 10 minutes
Makes: 450 g jam (approximately)

Ingredients

120 gpomegranate seeds (from about two-thirds of a pomegranate)
250 mlfresh pomegranate juice
½ tbsplemon juice
175 gsugar
15 gpectin powder (increase to 20 g for a firmer set, or use quantity according to package instructions)
1 packetFigo Wholemeal Mantou

Method

  1. To remove the pomegranate seeds, cut a pomegranate in half and submerge in a large bowl of clean water. Separate the seeds from the pith using fingers. Discard the pith and peel. Pour the seeds through a strainer to drain away the water.
  2. Place the pomegranate seeds and juice in a saucepan together with the lemon juice.
  3. Stir the pectin powder into the sugar with a dry spoon, making sure to mix well.
  4. Gradually pour the pectin powder and sugar into the liquid ingredients in the saucepan, stirring well with a hand whisk while pouring to prevent the pectin from forming clumps.
  5. Bring the mixture to a boil over medium heat, stirring continuously with the hand whisk.
  6. Once the mixture boils, let it continue to boil gently for one minute. The jam should form a gel when a drop is placed onto a cold spoon or plate. Remove the saucepan from heat.
  7. Use the hand whisk to gently push down on the pomegranate seeds into the jam to burst any bubbles that would have formed on the surface. The will still be runny when hot.
  8. Pour the jam into a sterilized jar(s) and cover with the lid(s).
  9. When cool, store in the fridge. The jam will set further on being chilled. Serve with Figo Wholemeal Mantou
