Spicy Sesame Ramen

A beautiful blend of flavours come together in this Spicy Sesame Ramen. Serve up this dish for lunch or breakfast.

Ingredients

2QL Omega eggs
⅛ tspsalt
½ tspgarlic powder
220 gramen noodles - fresh or dried (cooked according to packet instructions)
Spicy Sesame Dressing:
4 tbspmix of black and white sesame seeds, toasted
4 tbspwater
3 tbspsoy sauce
2 tbsprice vinegar
1 tspginger, grated
2 tspshichimi (Japanese chilli pepper)
2 tbsptoasted sesame oil
Toppings:
40 gJapanese cucumber, thinly sliced on the diagonal
40 gpurple cabbage, thinly sliced
30 gcorn kernel
6cherry tomatoes, quartered
60 gsweet peas, blanched in hot water
40 gcarrot, thinly sliced on the diagonal
4MUSHROOM Crab Filaments, thinly shredded
6medium prawns, sautéed until prawns are pink and cooked
½ avocado, thinly sliced
Kanikko (Japanese tiny crab snack)
Spring onion, bonito flakes and seaweed as garnish

Method

  1. Whisk the 2 QL Omega eggs with salt and garlic powder. In a medium heated pan add ¼ of the egg mix and swirl around the pan to get a thin egg spread resembling a crepe.
  2. When the edges of the egg are cooked, flip the egg crepe and cook for a few seconds. Remove and repeat with the remaining egg mixture.
  3. Roll up the egg crepe and slice into thin ribbons, set aside.
  4. In a pestle and mortar, pound the sesame seeds to a paste. Add water, soy sauce, rice vinegar, ginger, shichimi, and sesame oil, combine the dressing well.
  5. Arrange in a salad bowl the ramen and pour half the dressing on it, then arrange the toppings around the bowl. Top with the remaining dressing and the garnishes.
