Hot & Spicy Crispy Bites are made from Mushroom Fried Crab Sticks and other basic ingredients commonly found in most grocery stores. This savoury snack has proven to be a crowd pleaser and its superb flavour and crunchy texture will leave you craving for more.

Makes: 1 container
Ingredients
60 g | Mushroom Fried Crab Stick, thawed |
---|---|
20 g | dried anchovies (ikan bilis) |
40 g | peanut |
35 g | garlic, minced |
25 g | shallot, minced |
1½ tsp | oil |
45 g | chili paste (cili giling) |
85 g | sugar |
¼ tsp | salt |
¾ tsp | soy sauce |
2 | kaffir lime leaves, thinly sliced |

Method
- Cut the crab sticks into about 2 cm lengths. Unroll and shred the crab sticks by hand into moderately thin strips. Deep fry until golden and crisp. Remove from oil, drain and set aside.
- Wash and dry the anchovies.
- Preheat oven to 180C and roast the peanuts for 10 minutes or until done. Next roast the anchovies. Set aside.
- Sauté the garlic and shallots in the oil until fragrant, add the chili paste and sauté for another minute or so.
- Add the sugar, salt, soy sauce and kaffir lime leaves to the chili mixture and cook until the sugar melts.
- Stir in the Mushroom Fried Crab Sticks, dried anchovies and peanuts; toss to coat. Remove from heat once the crab sticks are well coated.
- Spread the mixture out on a baking tray and bake at 180C for about 8 minutes, until the spicy coating on the crab sticks are dry. Cool and store in an airtight container.
