Hot & Spicy Crispy Bites

Hot & Spicy Crispy Bites are made from Mushroom Fried Crab Sticks and other basic ingredients commonly found in most grocery stores. This savoury snack has proven to be a crowd pleaser and its superb flavour and crunchy texture will leave you craving for more.

 

Preparation time: 20 minutes
Cooking time: 8 minutes
Makes: 1 container

Ingredients

60 gMushroom Fried Crab Stick, thawed
20 gdried anchovies (ikan bilis)
40 gpeanut
35 ggarlic, minced
25 gshallot, minced
1½ tspoil
45 gchili paste (cili giling)
85 gsugar
¼ tspsalt
¾ tspsoy sauce
2kaffir lime leaves, thinly sliced
Oil for deep-frying

Method

  1. Cut the crab sticks into about 2 cm lengths. Unroll and shred the crab sticks by hand into moderately thin strips. Deep fry until golden and crisp. Remove from oil, drain and set aside.
  2. Wash and dry the anchovies.
  3. Preheat oven to 180C and roast the peanuts for 10 minutes or until done. Next roast the anchovies. Set aside.
  4. Sauté the garlic and shallots in the oil until fragrant, add the chili paste and sauté for another minute or so.
  5. Add the sugar, salt, soy sauce and kaffir lime leaves to the chili mixture and cook until the sugar melts.
  6. Stir in the Mushroom Fried Crab Sticks, dried anchovies and peanuts; toss to coat. Remove from heat once the crab sticks are well coated.
  7. Spread the mixture out on a baking tray and bake at 180C for about 8 minutes, until the spicy coating on the crab sticks are dry. Cool and store in an airtight container.
