QL Rudolph Cupcakes

If you can’t get enough of your favourite red-nosed reindeer, here are some Rudolph cupcakes to brighten your day. Made from dark chocolate, and a whole lot of different ingredients, the recipe is sure to bring joy to the world, and your family.

Preparation time: 1 hour
Cooking time: 20 minutes
Makes: 9 cupcakes

Ingredients

For chocolate cupcake:
100 gdark chocolate couverture
165 gunsalted butter
100 gsugar
4QL Omega Eggs
75 gplain flour
15 gunsweetened cocoa powder
1¼ tspbaking powder
Pinch of salt
Dark chocolate ganache:
110 gdark chocolate
180 gwhipping cream
To decorate:
Giant chocolate buttons
Crisp-coated chocolates
Mini pretzels
Black food colouring
Mini marshmallows, sliced

Method

  1. Preheat oven to 180°C.
  2. Place dark chocolate and butter in a large microwave-safe bowl, then melt in the microwave oven for approximately 2 minutes. Pause in between the cooking time to stir the mixture.
  3. Remove from the microwave oven, then stir in the sugar. Set the mixture aside to cool, about 10 minutes.
  4. Mix the mixture for about 3 minutes, then slowly add in the eggs one at a time.
  5. Sift together the flour, cocoa powder, baking powder, and salt. Fold the flour mixture into the wet ingredients until well-combined.
  6. Fill the batter into cupcake cups, to about two-thirds full, then bake for 20 minutes or until an inserted toothpick comes out clean.
  7. For the chocolate ganache, heat up whipping cream in the microwave oven, then add in the dark chocolates. Stir until well combined. Set aside and allow to cool.
  8. To decorate the cupcakes, spread the ganache over the top of the cupcakes. Spoon the remaining icing into a small piping bag.
  9. Press a chocolate button onto the cake as a nose, then stick a crisp-coated chocolate on top using a little ganache. Stick on two slices of marshmallows as the eyes and use the black writing icing for the pupils. Stick on the pretzels as the ears.
