Stained-Glass Butter Cookies

With melted candy surrounded by dough to resemble stained glass windows, these delicious butter cookies look fabulous hanging on Christmas trees. It may take a little effort but it will be well worth the delighted faces of people seeing them for the first time.

For this stained-glass butter cookies recipe we have used QL Omega eggs. These delicious eggs contain more than 10 essential vitamins and minerals, including Omega-3 and DHA for heart health. Plus, every egg has up to 50% lower cholesterol than ordinary store-bought eggs.

Makes: 3 dozens

Ingredients

For cookie dough:
500 gplain flour
3/4 tspbaking powder
1/4 tspsalt
230 gunsalted butter, softened
200 gfine sugar
4QL Omega eggs
1/2 tbspvanilla essence
220 ghard candy in various colours, finely crushed
For royal icing decoration: (optional)
30 gQL Omega egg whites
180 gicing sugar, sifted

Method

  1. For cookie dough: Mix flour, baking powder, and salt together in a bowl. Cream butter and sugar until light and fluffy. Then add in QL Omega eggs and vanilla essence and mix until well combined. Add in flour mixture, combine well to form a dough. Keep in the chiller for 20 minutes.
  2. Preheat oven to 170 degrees. Roll out dough between parchment papers to 8mm thickness. With a 3” Christmas-tree-shaped or a 3” hexagon star-shaped cutter, cut out dough. Place cookies an inch apart from one another, on a parchment lined baking tray. With 1cm and 5mm round-shaped cutters, cut out dough randomly on Christmas-tree shaped cookies. With a 1.5” star-shaped cutter, cut out dough on the centre of hexagon star-shaped cookies.
  3. Bake until cookies are pale for 10 minutes, remove from oven and fill cutouts with crushed candy. Bake until cookies until light golden brown and candy is melted, 5 minutes. Let cool on baking sheets on wire racks.
  4. For royal icing: (optional) Mix QL Omega egg white with icing sugar until well combined. Fill royal icing into a small piping bag and cut out a small round tip at the end and pipe out line and small ball shapes to decorate (as desired) on the cooled stained-glass cookies. Let dry completely for 6 hours or overnight.
